Ingredients

  • 2 chicken breast without skin and bones, cut into thin strips
  • 1/2 lettuce head, thinly sliced
  • 1 green bell peppers, thinly sliced
  • 1 cupfresh mushrooms, thinly sliced
  • 1 cupcorn
  • 2 scallions, finely sliced
  • 4 carrots, grated
  • 1/4 cupparmesan cheese, grated
  • Dressing
  • 3 tablespoonsoil
  • 2 teaspoonssugar
  • 2 teaspoonsvinegar
  • 1 clovegarlic
  • 2 tablespoonslemon juice, equivalent to juice of half lemon
  • salt to taste
  • pepper to taste

Steps

  1. 1

    Cook the chicken strips either on a grill or in the oven in a slightly oiled baking tray. Remove when well cooked on both sides. Let cool.

    For the dressing, mix the ingredients together making sure that the sugar is well dissolved.

  3. 3

    In a bowl, mix the lettuce, green pepper, mushrooms, corn, spring onions and carrots together then add the dressing and mix well.

  4. 4

    Layer the chicken strips on top and sprinkle with the parmesan cheese.

  5. 5

    Serve cold.
