Add all the ● ingredients to a bowl and mix well with a large spoon until the mixture becomes sticky. If you have extra shiso leaves, add them in now!

Heat oil in a skillet. Drop spoonfuls of the mixture into the pan using a spoon. It’s easier if you use a spoon in each hand. Cook over low heat.

Once all the mixture is in the pan, turn the heat to low-medium, cover, and cook for 2–3 minutes. When the surface turns white, flip them over. (The photo shows them halfway flipped.)

Remove the lid and cook until the other side is nicely browned.

Wipe off any excess oil, sprinkle the sugar evenly, then add the soy sauce and water. Swirl the pan occasionally and simmer until the sauce thickens and coats the tsukune.

When the sauce is glossy and thick, turn off the heat. Done!
