Cut up the chicken, clean it, and boil it. Once boiled, sauté it in oil or butter, and add salt and black pepper.

Grate the tomatoes and chop the parsley. Combine the spices, rice, tomatoes, and parsley, and mix well. When the chicken is cooked, add it to the mixture.

Hollow out the eggplant and zucchini. Wash the zucchini with water and salt, then stuff them. In the pot you’ll use for cooking, place onions and potatoes (or other vegetables you like) at the bottom.

Next, arrange the stuffed eggplant in the pot, then the zucchini on top, since eggplant cooks faster.

Place the pot on the stove. Put a small pot filled with water on top of the stuffed vegetables to weigh them down. Cover the stuffed vegetables with water, and once it boils, add tomato paste.

After about 1 1/2 hours, the dish will be ready. Enjoy!
