Cooking Instructions

Poke the chicken with a fork to help the flavors soak in. Marinate with soy sauce, sugar, and mirin for about 30 minutes. Add the scallion if using. Reserve some marinade for basting.

Turn the chicken over halfway through marinating. You can use a zip-top bag for easy cleanup.

Grill or broil the chicken for 15–25 minutes, until golden brown. Baste with the reserved marinade during cooking.
