Ingredients

Makes 7–8 cakes, about 1 1/2 inches (4 cm) each
  1. 2medium potatoes
  2. 2-3 tablespoonscooked edamame
  3. 2 tablespoonscorn (frozen or any kind)
  4. 1/2egg
  5. 1/4 teaspoonor more salt
  6. 1-2 teaspoonspotato starch (or cornstarch)
  7. Sliced cheese of your choice, as needed (optional)

Cooking Instructions

    Peel the potatoes and cut them into quarters. Place them in a microwave-safe bowl with a little water and microwave for 2–3 minutes (depending on your microwave) until soft. Mash the potatoes.

    Add all the ingredients except the cheese to the mashed potatoes and mix well. You can use chopsticks or a spoon to stir.

    Once well mixed, shape the mixture into your preferred size (about 8–12 pieces). Wet your hands to help form them neatly. If you like, add some melty cheese inside each cake.

    Heat a little oil in a pan and cook the cakes until golden brown on both sides.
