I wanted to make mapo tofu but didn’t have any ground meat, so I tried it with pork strips instead. It turned out even more filling and delicious. My hungry kids loved it!

Boil the tofu and drain. Gently place the tofu in boiling water, bring back to a boil, and cook for about 2 minutes. Drain in a colander, making sure the pieces don’t overlap.

Sauté most of the green onion (save some for garnish), ginger, and garlic in sesame oil. Add the pork strips, cut into bite-sized pieces, and cook until browned.

Once the pork changes color, add the sauce mixture. When it starts to bubble, add the drained tofu.

When the tofu is heated through and bubbling, add the potato starch mixture to thicken. Just before turning off the heat, add the reserved chopped green onion.
