Ingredients

2 servings
  1. For 2 servings Chinese-style noodles
  2. 4 slicesroast pork (chashu)
  3. 1green onion (green part only)
  4. 1/2green onion (white part only)
  5. 1/3 cup (100 ml)concentrated noodle soup base (3x strength)
  6. 3 1/2 tablespoons (50 ml)sake
  7. 1 1/2 cups (350 ml)water
  8. 1 teaspoonchicken bouillon powder
  9. 1 tablespoonsesame oil
  10. To taste ground chili pepper
  11. 1 tablespoondried bonito powder
  12. 1 tablespoonground white sesame seeds
  13. [Toppings]
  14. As desired: chashu, menma (seasoned bamboo shoots), marinated soft-boiled egg, etc

Steps

    Cut the chashu into 1/2-inch cubes. Slice the green onion into 1/2-inch rounds.

  2. 2

    Heat the sesame oil in a frying pan and add the chashu. Sauté for about 1 minute.

  3. 3

    Add all the ingredients marked with ★ to the pan and simmer over medium heat for about 5 minutes. Meanwhile, cook the noodles, then drain and rinse them under cold water to chill.

  4. 4

    Taste the soup and add ground chili pepper as desired.

  5. 5

    Pour the soup into serving bowls and sprinkle half of each ● ingredient on top of each bowl. Add your favorite toppings to finish.

  6. 6

    If possible, save some of the noodle cooking water. After eating the noodles, add it to the leftover soup to dilute and enjoy as a broth.
