I made mackerel in tomato sauce and it was delicious, so I thought it could be even easier with canned mackerel, and created this recipe.

Slice the onion. Adding garlic is also delicious if you like.

In a frying pan, add olive oil and onion, and sauté until soft. Sprinkle with about 2 pinches of salt.

Add the canned tomatoes, canned mackerel with its liquid, bouillon, and ketchup, and simmer over medium heat for 5 minutes. If the liquid starts to splatter, reduce to low heat.

The liquid will reduce slightly. Add whole grain mustard and black pepper, simmer for about 1 minute, then turn off the heat.

You can either break up the mackerel at the end or leave it in chunks, as you prefer.

Serve. It's delicious as is, but you can sprinkle grated Parmesan cheese for an Italian touch.
