Our Shrimp and Chive Dumplings

In our household, we make dumplings almost every week, and the favorite is these refreshing shrimp and chive dumplings. The meat is just a binder.
The origin of this recipe
I prefer dumplings with lots of vegetables and shrimp over those with lots of ground meat. I used to make them randomly and sometimes ended up disappointed, so I decided to create a proper recipe.

I prefer dumplings with lots of vegetables and shrimp over those with lots of ground meat. I used to make them randomly and sometimes ended up disappointed, so I decided to create a proper recipe.

For the shrimp: Rub with cornstarch (not listed in ingredients), then rinse well with water and pat dry with a paper towel. Tear into 2-4 pieces with your fingers.

For the chives and cabbage: Finely chop. They don't need to be too fine. Do not squeeze out the moisture.

For the ground pork: In a bowl, mix with the ● ingredients until sticky. This is key.

Finish the filling: Combine the shrimp from step 1, the vegetables from step 2, and sesame oil with the pork from step 3 to complete the filling.

Wrap and cook: Heat sesame oil in a frying pan over medium heat, arrange the dumplings, and lightly brown them.

Add 1/2 cup of water, cover immediately, and steam for about 5 minutes. Be careful not to burn them; medium-high heat is recommended.

Once the water has evaporated, drizzle sesame oil (not listed in ingredients) with a spoon, remove the lid, and cook until the skins are crispy and nicely browned.

Our dumpling dipping sauce: Chinese black vinegar (Zhenjiang vinegar) 3: soy sauce 2: chili oil with bits 1. It's spicy.
