Toast the panko breadcrumbs in a dry skillet over medium heat until golden brown, then remove from heat and set aside.

Remove the seeds and skin from the pumpkin. Wrap the pumpkin in plastic wrap and microwave for about 5 minutes, then mash with a spoon or fork.

Shape the mashed pumpkin into small, easy-to-hold balls, then place them in the skillet with the toasted panko.

Gently shake the skillet to roll the pumpkin balls and coat them evenly with the breadcrumbs. They're ready when fully coated!

- Adjust the microwave time based on the amount of pumpkin and your microwave's wattage.
