Ingredients

  1. 1 cuppasta, Dilatini, or any other very small pasta
  2. 3/4 cupquinoa
  3. 1 garlic clove, chopped
  4. 1/2 small onion, cut into cubes
  5. 1 cupcarrots, diced
  6. 1 cuppeas
  7. 1 cuppotatoes, cut into small cubes
  8. 4 tablespoonsolive oil
  9. 8 cupschicken stock
  10. 1/2 cupparmesan cheese, Parmaginao Reggiano
  11. salt and pepper to taste

Cooking Instructions

    In a large pot, cook the onion and garlic in the olive oil over medium heat for 5 minutes or until soft.

    Add the stock and quinoa and bring to simmer for 15 min.

    Add the peas, carrots, potatoes and pasta. Season with salt and pepper to taste.

    Cook for 15 min over low heat until the pasta and potatoes are cooked and let it rest for 10 min before serving it.

    Serve with cheese.
