Cooking Instructions

Place the bread dough ingredients into the bread machine pan, select the 'dough course', and press start.

If your machine has an automatic yeast dispenser, use it.

To make it easier to remove the baked bread from the pan, cut a large piece of parchment paper and line the pan.

For this pan size, cut the parchment paper to 50cm, fold it to fit the pan, and tuck the edges outside the pan.

Once the dough is ready, remove it from the bread machine and place it on a lightly floured cutting board.

Divide the dough into 16 pieces using a dough scraper, deflate, and shape into balls. Cover with a tightly wrung-out damp cloth and let rest for 8 minutes (bench time).

Press down on the dough to deflate again, reshape into balls, and place them in a square pan lined with parchment paper.

I forgot to line the square pan with parchment paper this time. Without it, removing the bread from the pan is quite a task.

Spray the dough in the square pan with water, place it in a 104°F (40°C) oven, and let it rise for 35 minutes.

After rising, remove the pan from the oven and preheat the oven to 356°F (180°C).

Spread okonomiyaki sauce on the surface of the dough using the back of a spoon.

Squeeze mayonnaise over the okonomiyaki sauce.

Sprinkle bonito flakes and aonori on top.

Once the oven is preheated, place the pan back in and bake for 12-13 minutes, checking as needed.

If the sauce starts to burn in spots due to oven quirks, rotate the pan as needed while baking.

Once baked, remove the bread from the pan. Lift it out by holding both ends of the parchment paper.

Without parchment paper, the sauce can stick to oven mitts when removing the bread, making it difficult.

I tried several times to recreate the ones we've had at a certain restaurant in Osaka, and after many experiments and frequent trips there to analyze their takoyaki, we came up with this recipe.The flavor of the dashi stock really comes through, and the insides are creamy. I was finally able to create our ideal takoyaki bites!Make the dashi stock in advance and chill it well. A rich flavored dashi is the key to the flavor of the takoyaki.If you want to make the insides very creamy, use 150 g of cake flour.To make the outsides extra crispy, use a generous amount of oil.If you add cabbage and sakura shrimp it will become an okonomiyaki, so we just use these 4 ingredients for the filling.
