Ingredients

  1. 1fillet swai fish (also called pangasius or basa)
  2. 1 tablespoongreen curry paste
  3. 1 cuphomemade unsweetened soy milk (240 ml)
  4. 1 cupThai eggplant (about 100 grams), cut into bite-sized pieces
  5. 4kaffir lime leaves
  6. 1small handful fresh Thai basil
  7. 5fresh chili peppers
  8. 2 clovesgarlic
  9. 1/2 tablespoonlow-sodium fish sauce
  10. 1/2 teaspoonlow-sodium salt
  11. 1 teaspoonstevia sweetener

Cooking Instructions

    Pour the soy milk into a pan and heat over medium heat. Once it’s hot, add the green curry paste and crushed garlic. Stir well to combine.

    Add the swai fish fillet. Season with low-sodium fish sauce, low-sodium salt, and stevia. Gently stir to avoid breaking up the fish.

    Add the Thai eggplant and cook until tender. Add the Thai basil, kaffir lime leaves, and fresh chili peppers. Gently stir again, then turn off the heat.

    Serve this healthy green curry hot, ideally with brown rice.
