Ingredients

Serves 1 serving
  1. 1 piecechicken (thigh or breast)
  2. Enough to coat chicken cornstarch or all-purpose flour
  3. Teriyaki Sauce↓↓
  4. 1 tablespoonsugar (about 12 grams)
  5. 1 tablespoonsoy sauce (about 15 mL)
  6. 1 tablespoonsake (about 15 mL)
  7. 1 tablespoonmirin (about 15 mL)
  8. As neededyour choice of vegetables (this time: cucumber)
  9. As much as you like mayonnaise (optional)
  10. 1little for extra flavor: garlic powder (optional)
  11. 1serving cooked rice

Steps

  1. 1

    Mix the sauce ingredients together. Cut the chicken into bite-sized pieces and lightly coat with cornstarch or flour. Slice your choice of vegetables.

  2. 2

    Heat vegetable oil in a skillet. Cook the chicken until almost done, then add the sauce and simmer until thickened. (Add garlic powder here if using.)

  3. 3

    Spoon rice into a bowl or plate, layer with the prepared vegetables, and top with the teriyaki chicken and sauce. Add mayonnaise if you like.
