Mix the sauce ingredients together. Cut the chicken into bite-sized pieces and lightly coat with cornstarch or flour. Slice your choice of vegetables.

Heat vegetable oil in a skillet. Cook the chicken until almost done, then add the sauce and simmer until thickened. (Add garlic powder here if using.)

Spoon rice into a bowl or plate, layer with the prepared vegetables, and top with the teriyaki chicken and sauce. Add mayonnaise if you like.
