This is a quick and easy Japanese-style omurice, perfect for when you're short on time. I often make it for lunch.

Mix together the ingredients marked with ● (water, mentsuyu, potato starch, and optional ginger). In a separate bowl, combine the cooked rice with mayonnaise and bonito flakes.

Heat a frying pan and add a little oil. Pour in half the beaten eggs for one serving. When the edges start to set, gently stir with chopsticks and spread the egg into a round shape.

When the egg is still slightly runny, place half of the rice mixture in the center. Slide the omelet onto a plate, folding it over the rice as you go.

Once both servings are prepared, pour the ● sauce mixture into the same pan. Cook until it thickens, then pour it over the omurice. Top with green onions and sesame seeds if desired.
