Cooking Instructions
- 1
Sift the all-purpose flour. Bring the butter to room temperature. Take it out of the fridge early.
- 2
Mix the butter well and beat the egg thoroughly. If using granulated sugar, break up any lumps by hand.
- 3
Add the sugar to the butter and mix well. Then, add the egg in about three parts, mixing a little at a time. Mix thoroughly until it becomes creamy.
- 4
Add the all-purpose flour to the butter mixture and gently fold it in with a spatula.
- 5
If adding cocoa or other flavors, divide the dough here and mix in the desired ingredients.
- 6
Finally, gather the dough into a ball by hand. Knead it a little, but be careful not to over-knead. In warm weather, you can finish mixing with a spatula.
- 7
Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes to 1 hour. Do not flatten the dough too much, as it will be easier to roll out later.
- 8
Roll out the dough to a thickness of 1/5 inch (5 mm) and cut into your favorite shapes. Line a baking sheet with parchment paper.
- 9
Preheat the oven to 340°F (170°C) and bake for 15 minutes or until the edges are lightly browned. (The cocoa cookies may be harder to judge.)
- 10
Adjust the baking time as needed, as ovens vary. If the edges aren't browning, add more time to prevent a floury taste.
- 11
For thinner or smaller cookies, reduce the baking time. For larger cookies, increase the time slightly.
- 12
The 'HAPPY' letters and eye stamps used on the cookies are from a decorating kit available at dollar stores.
- 13
The cookies will be soft when warm but will become crispy as they cool.
- 14
The sweetness is mild. If you prefer sweeter cookies, add more sugar.
- 15
In warm weather, the dough may become soft while handling. If this happens, chill it in the refrigerator.
- 16
In warm weather, it's better to use tools like a spatula instead of mixing by hand.
- 17
If the cookies are dry and floury, they may need more baking time. Try baking them a little longer.
- 18
Some users have reported baking at 340°F (170°C) for 17 minutes, so adjust the baking time as needed.

Mama's Golden Recipe: Basic Cut-out Cookies Mama's Golden Recipe: Basic Cut-out Cookies
I think the recipe for this cookie dough originally came from a recipe on the back of a box that I saw when I (Mama) started making sweets in elementary school. Now it's a popular recipe. I've made fine adjustments to the recipe, and have settled on this ratio for more than 10 years. I have continued to make cookies with this reliable recipe. When using All-Purpose Flour instead of cake flour, the flour will absorb more liquid than cake flour, so use a large egg or reduce the amount of flour. About 220 g of flour in total should be just right. If you want well-defined shapes, chill the cut-out dough in the refrigerator or freezer to stiffen the dough. Similarly, if the dough starts to soften, chill it again to stiffen it again. Recipe by aya#2. (Easy to make amount.) cookpad.japan -

Cut-Out Cocoa Cookies with Rice Flour Cut-Out Cocoa Cookies with Rice Flour
Rice flour is pretty popular, and I had some left over, so I used it to make cookies. With the leftover egg white, make Egg White Cookies..I use half rice flour and half cake flour, but you could use either. You could also add chocolate chips. It's got an Oreo-like texture, so for kids you could make cookie sandwiches using jam or cream, and that's very delicious. Recipe by Chibipurin cookpad.japan -

Easy Shortbread Cookies Easy Shortbread Cookies
I revised a shortbread recipe, which I used to bake in a café in Canada. It's such an easy ratio of ingredients, so once you bake these cookies, you can make them without looking at the recipe. Feel free to adjust the amount of the ingredients as well. They can be made in 20 minutes!Once you have flipped the baking pan, keep an eye on the cookies so that they don't burn. Take the baking pan out of the oven when the cookies are light brown on the edges, and cook through with the residual heat. I recommend using butter for this recipe since they result in a richer and tastier cookie. Recipe by LazyHata cookpad.japan -
