Ingredients

About 40 cookies, half plain and half cocoa
  1. 2 cupsall-purpose flour (about 240 grams)
  2. 7 tablespoonsbutter (about 100 grams)
  3. 1/3 cupsugar (about 80 grams)
  4. 1medium egg
  5. 1 tablespooncocoa powder (10 grams, use 1/2 tablespoon if using unsweetened cocoa)
  6. This amount of cocoa powder is for half of the dough, as we will make half plain and half cocoa

Cooking Instructions

  1. 1

Sift the all-purpose flour. Bring the butter to room temperature. Take it out of the fridge early.

  2. 2

Mix the butter well and beat the egg thoroughly. If using granulated sugar, break up any lumps by hand.

  3. 3

Add the sugar to the butter and mix well. Then, add the egg in about three parts, mixing a little at a time. Mix thoroughly until it becomes creamy.

  4. 4

Add the all-purpose flour to the butter mixture and gently fold it in with a spatula.

  5. 5

If adding cocoa or other flavors, divide the dough here and mix in the desired ingredients.

  6. 6

Finally, gather the dough into a ball by hand. Knead it a little, but be careful not to over-knead. In warm weather, you can finish mixing with a spatula.

  7. 7

Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes to 1 hour. Do not flatten the dough too much, as it will be easier to roll out later.

  8. 8

Roll out the dough to a thickness of 1/5 inch (5 mm) and cut into your favorite shapes. Line a baking sheet with parchment paper.

  9. 9

Preheat the oven to 340°F (170°C) and bake for 15 minutes or until the edges are lightly browned. (The cocoa cookies may be harder to judge.)

  10. 10

Adjust the baking time as needed, as ovens vary. If the edges aren't browning, add more time to prevent a floury taste.

  11. 11

For thinner or smaller cookies, reduce the baking time. For larger cookies, increase the time slightly.

  12. 12

The 'HAPPY' letters and eye stamps used on the cookies are from a decorating kit available at dollar stores.

  13. 13

The cookies will be soft when warm but will become crispy as they cool.

  14. 14

The sweetness is mild. If you prefer sweeter cookies, add more sugar.

  15. 15

In warm weather, the dough may become soft while handling. If this happens, chill it in the refrigerator.

  16. 16

In warm weather, it's better to use tools like a spatula instead of mixing by hand.

  17. 17

If the cookies are dry and floury, they may need more baking time. Try baking them a little longer.

  18. 18

Some users have reported baking at 340°F (170°C) for 17 minutes, so adjust the baking time as needed.

Recipe ID: 20252375 Easy Basic Icebox Cookies. Can be made in large batches and the dough can be frozen.

  21. 21

This dough can also be used for melon bread crusts. Mix the flour more thoroughly than for cookies.
