Ingredients

Serves 2 servings
  1. 2 packscooked udon noodles (frozen udon is fine)
  2. 3 slicesbacon (or pork)
  3. 1 stalkgreen onion
  4. 1/4onion (optional)
  5. 1 packmaitake mushrooms
  6. 2 sheetsroasted nori seaweed
  7. 1 teaspoondashi powder
  8. 1 1/2-2 tablespoonssoy sauce
  9. 1 1/2-2 tablespoonsmirin
  10. For stir-frying udon:
  11. 3 tablespoonssake
  12. For finishing:
  13. 2 teaspoons butter (10 grams)

Cooking Instructions

    Microwave the cooked udon noodles for 1–2 minutes. Mix together the dashi powder, soy sauce, and mirin. Cut the bacon into thick strips, slice the green onion diagonally, and thinly slice the onion.

    Separate the maitake mushrooms into small pieces. Tear the nori sheets into small pieces. (Try to keep the nori dry until use.)

    In a frying pan, cook the bacon until the fat starts to render. Add the green onion and onion, and sauté until softened. Add the maitake mushrooms and stir-fry briefly over medium heat.
