Put the sweet and spicy sauce ingredients in a jar with a lid and shake well. The listed amounts are enough for up to 2 chicken breasts.

Remove the skin from the chicken breast, pierce it with a fork, and slice it diagonally.

Cut the diagonal slices in half to make stick-like pieces.

First, coat the chicken evenly with sugar.

Then, rub in the sake, salt, pepper, and garlic.

After seasoning, coat the chicken evenly with potato starch.

Heat vegetable oil in a frying pan and cook the chicken over medium heat. Do not touch it except when flipping!

Flip the chicken and cook until both sides are nicely browned.

Once browned, wipe off excess oil, pour in the sweet and spicy sauce, and simmer until coated.

Place the chicken on a plate, lightly reduce the remaining sauce in the pan, pour it over the chicken, and it's ready! Shiso leaves and white sesame seeds are optional.
