Heat oven to 400 deg F. Line muffin tin with paper liners or oil/butter

Whisk the flour, sugar, baking powder, and salt together in a large bowl

Add oil to a measuring cup that at least holds 1 cup. Add the egg then fill the cup with milk to the 1 cup line. Add vanilla and whisk to combine

Add milk mixture to dry ingredients then use a fork to combine. Do not overmix

Put batter in muffin tins. For cups with no batter put 1-2 tbsp of water for even cooking

Bake for 15-20 min or until a toothpick inserted into it will come out clean.

Store in a plastic bag at room temperature for 2-3 days.

To freeze, wrap them in aluminum foil or place in freezer bags. Freeze for up to 3 months
