This is a slightly spicy tsukemen (dipping noodles). If you’re making it for kids, just use less gochujang. It’s budget-friendly and easy! You can even use udon noodles if you like.

Add all the spicy sauce ingredients to a small saucepan and heat gently, stirring until dissolved.

Cook the noodles to your preferred firmness, then drain. While still warm, place them in serving bowls. (We usually use fresh noodles, so we rinse them with water before serving.)

Pour the sauce from step 1 into separate bowls and add sesame seeds and green onions.

Top with your favorite toppings, such as boiled eggs, bean sprouts, or kimchi.
