Ingredients

Makes about 10 oval-shaped meatballs
  1. 10.5 oz (300 grams)◎ ground chicken
  2. 1 piece◎ hanpen (Japanese fish cake, about 3.5 oz/100 grams)
  3. 1 tablespoon◎ sake (Japanese rice wine)
  4. 1/2 tablespoon◎ sesame oil
  5. 1/2 tablespoon◎ mayonnaise
  6. 1/2 teaspoon◎ sugar
  7. 1little ◎ grated ginger
  8. 1 pinch◎ salt and pepper
  9. To taste ◎ chopped green onions (scallions)
  10. Sauce
  11. 2 tablespoons● soy sauce
  12. 2 tablespoons● sugar
  13. 2 tablespoons● sake (Japanese rice wine)
  14. 2 tablespoons● mirin (sweet rice wine)
  15. 1 tablespoonvegetable oil
  16. 1 tablespoonwater (for steaming)

Steps

    Blend the hanpen in a blender or food processor until smooth. In a small bowl, mix together all the ● sauce ingredients.

    Add all ◎ ingredients to a mixing bowl.

    Knead the mixture well until combined.

    Heat 1 tablespoon of vegetable oil in a skillet. Shape the mixture into oval patties and add them to the pan.

    Once browned on one side, flip and brown the other side.

    Add 1 tablespoon of water, cover with a lid, and steam-cook for 2–3 minutes.

    Remove the lid, pour in the sauce, and simmer until the sauce thickens and coats the meatballs.

    When the sauce is glossy and thickened, turn off the heat.

    Serve! Optionally, top with an egg yolk if you like.
