I wanted to eat cold udon soup, so I tried making it myself. The broth is lightly seasoned, so you can even drink it all! Inspiration for this recipe: I love the chilled udon at Marugame Seimen, so I wanted to make something similar at home.

1 packfrozen Sanuki udon noodles
Grated daikon radish, as much as you like
2 tablespoonsmentsuyu (triple-concentrated noodle soup base)
1 1/4 cupswater (300 ml)
1/2 teaspoonlemon juice

Mix the mentsuyu, water, and lemon juice together, then chill in advance.

Grate the daikon radish.

Boil the frozen udon noodles, then rinse under cold water to cool.

Place the udon noodles in a bowl, pour over the chilled broth, and top with grated daikon and green onions. Enjoy!
