Cut the vegetables into bite-sized pieces and thread them onto skewers. Use eggplant, shishito peppers, shiitake mushrooms, and lotus root.

Thread cheese, quail egg wrapped in bacon, shrimp shumai, onion, and asparagus wrapped in bacon onto skewers.

Thread pork, squid with shiso, shrimp, and cocktail sausages onto skewers.

To make squid with shiso, place a shiso leaf on top of the squid roll and roll it up tightly from one end.

Before cutting, insert skewers evenly, then cut between the skewers to keep everything together.

Cut between the skewers to prevent the pieces from falling apart.

See? It's easy! You can make a lot at once. They look cute, and the shiso adds a fresh flavor—give it a try!

For potatoes or pumpkin, microwave for about 2 minutes beforehand to shorten frying time.

Dip the skewers in batter, then coat with panko and fry. Cheese cooks quickly and may burst, so fry briefly. Be careful of oil splatter with bacon-wrapped quail eggs.
