In a small bowl, mix together the flour, water, and mayonnaise until smooth.

Cut the chicken thigh into bite-sized pieces. If any pieces are thick, make a slit with a knife to flatten them. Season with salt and pepper.

Dip the chicken pieces into the batter from step 1, then coat with panko breadcrumbs.

Pour about 1/2 inch (1 cm) of oil into a frying pan and heat. Add the breaded chicken and shallow fry on both sides until golden brown.

Place the cooked chicken on paper towels to drain excess oil. Once cooled, pack into your bento box, drizzle with sweet miso sauce, and sprinkle with sesame seeds. Enjoy!
