Juicy Bite-Sized Chicken Katsu (Chicken Thigh)

These juicy chicken katsu bites are delicious! Their bite-sized shape makes them perfect for lunchboxes, too.

Since I'm not a fan of the strong flavor of chicken thighs, I added extra seasoning to make them flavorful and juicy in these bite-sized katsu pieces.

These juicy chicken katsu bites are delicious! Their bite-sized shape makes them perfect for lunchboxes, too.

Remove the skin and excess fat from the chicken thighs. Cut into bite-sized pieces. If any pieces are thick, make a small cut to even out the thickness.

Place the chicken and all seasoning ingredients in a bowl. Massage well and let sit for at least 15 minutes.
If you have time, refrigerate and marinate for 30 minutes to 1 hour.

Mix the 1.4 oz (40 g) flour and 4 tablespoons water together in a bowl to make a batter.

Sprinkle the marinated chicken with black pepper. Coat each piece in flour, then dip in the flour-water batter, then coat with panko. Shape as needed. (Makes about 20 small pieces.)

Heat oil to 340°F (170°C). Fry the chicken pieces for about 4 minutes, turning once, until golden brown and crispy. (Cooking time may vary depending on the size of the pieces.)

This recipe uses flour instead of egg for those with egg allergies.

Serve with your favorite vegetables and sauce. The chicken is flavorful enough to enjoy on its own, too!

I increased the amount of soy sauce and sugar in the seasoning from 1/2 to 1 teaspoon each. The original amounts work fine, so adjust to your taste.
