Add all the seasonings to a pot and bring to a simmer. Beat the egg in a separate bowl.

Once the pot comes to a boil, add the rice and green onion (if using). Simmer until the porridge reaches your desired consistency. If you prefer it firmer, it’s ready once it returns to a boil after adding the rice.

Slowly pour in the beaten egg while stirring. Let it boil briefly, then turn off the heat, cover, and let it steam for 2–3 minutes. Once the egg is set, gently stir and serve.
