Wash the pea shoots and set aside. Slice the garlic and mince the ginger. Use a knife to cut along the back of each shrimp, but do not cut all the way through.

Mix the shrimp with the marinade ingredients and let marinate for at least 10 minutes.

Bring a pot of water to a boil. Blanch the pea shoots for about 10 seconds until just softened, then remove and drain well.

Heat a pan and add 1 teaspoon of oil. Sauté the garlic slices until fragrant, then add the shrimp and cook until almost done. Add the blanched pea shoots and season to taste. Stir-fry quickly until everything is evenly mixed, then remove from heat.

To serve, place the pea shoots and any juices on the bottom of the plate to soak up the shrimp flavor.
