Winter Melon and Clam Soup *Easy Clam Soup 6*

I always remember winter melon soup being made with big chunks!

But when pairing it with clam soup, dice the winter melon into small cubes for a super quick dish. ^^

Tips:

★ Clams and littleneck clams can be cooked the same way.

★ You can substitute winter melon with loofah or large cucumber—just remember to cut them into small cubes.

★ Clams and littleneck clams add saltiness to the soup, so taste before adding extra seasoning.

  • Clams 3/4 pound (about 340 grams)
  • Winter melon 1 slice (about 7 ounces/200 grams)
  • as neededYoung ginger, julienned,
  • Seasonings
  • Rice wine 1 tablespoon (15 ml)
  • Salt, to taste

Steps

20 minutes
  1. 1

    Peel and remove seeds from the winter melon, then cut into small cubes.

  2. 2

    Add the winter melon cubes, clams, rice wine, and julienned ginger to a pot of cold water. Bring to a boil.

  3. 3

    Cook until the clams open and the winter melon turns slightly translucent. Season with salt to taste, and serve.
