Cooking Instructions

Place the eggs in a steamer, add 1 cup of water to the outer pot, and let it steam. Once done, soak the eggs in cold water, peel, and mash them.

You can steam the potato with the eggs, but if the eggs are done and the potato isn't fully cooked, add another cup of water to the outer pot and continue steaming the potato.

Finely chop the cucumber, squeeze out the excess water, and mix it with the eggs and potato.

Add 1 tablespoon of mayonnaise and mix well. You can add black pepper and a pinch of salt to taste. Chill in the refrigerator. This cold salad is perfect for hot summer days and can also be used as a spread for toast.

I make this with all the children's hard boiled eggs from the Easter Holiday every year and also sometimes in between when we are just craving it! I am a fan of miracle whip's flavor however, I will use mayonnaise if that's what I have. I also normally use celery seed as I enjoy the flavor of that as well. However, I've been out of that spice lately so I decided to substitute chia seeds and it worked just fine! You can also substitute any onions you have for the green ones. This is great on bread, in wraps, & even on crackers! (*Note: this recipe is written with eggs already hard boiled, if you need to boil them first, you will need to add 10-15 mins to your cook time.)
