You can easily make demi-glace sauce by simply mixing ketchup and Worcestershire sauce in equal parts and adding butter.

Ingredients

Serves 3 servings
  1. Chicken Rice
  2. 5.3 oz (150 g)boneless, skinless chicken thighs
  3. 3/4medium onion
  4. 1 teaspoonvegetable oil
  5. 6 tablespoonstomato ketchup
  6. 3 cupscooked rice (about 450g)
  7. Salt, to taste
  8. Black pepper, to taste
  9. Fluffy Eggs
  10. 6large eggs, beaten
  11. 2/3 cupmilk (150ml)
  12. Special Demi-Glace Sauce
  13. 1 packmushrooms (such as shimeji or button mushrooms)
  14. 1/2 tablespoonvegetable oil
  15. 2 tablespoonstomato ketchup
  16. 2 tablespoonsWorcestershire sauce
  17. 3 tablespoonswater (50ml)
  18. 2 teaspoonsbutter (10g)
  19. Finishing Touch
  20. 3 tablespoonsmilk

Steps

  1. 1

    Heat the vegetable oil in a frying pan. Add the chicken, cut into 1/2-inch cubes, and the onion, and sauté in order. Once cooked through, add the ketchup and stir-fry together.

    Add the warm rice and quickly stir-fry over high heat, breaking up any clumps. Season with salt and pepper, then transfer to serving plates.

  3. 3

    Beat the eggs. Add the milk to a frying pan and heat until it comes to a boil, then pour in all the beaten eggs at once.

  4. 4

    Stir gently and cook until the eggs are just softly set, then pour over the chicken rice.

  5. 5

    Heat the vegetable oil in a small saucepan. Add the mushrooms, cut into bite-sized pieces, and sauté.

  6. 6

    Add the ketchup, Worcestershire sauce, water, and butter. Cook for 1–2 minutes until it comes to a boil and thickens slightly, then pour over the omurice.

  7. 7

    Finish by drizzling with the milk.
