I thought to make something with soup. Let me try to make noodle instead of dumpling. Then I make a simple egg noodle from scratch with just five ingredients and the power of hand and time.

I thought to make something with soup. Let me try to make noodle instead of dumpling. Then I make a simple egg noodle from scratch with just five ingredients and the power of hand and time.

In a mixing bowl, place in the flour and salt, mix together.

Add egg yolks and oil. Mix them together. The dough will look like pieces of broken dough.

Add the water half and half while mixing the flour until it is incorporated and form a ball of dough. The dough should not be hard and too soft, kind in the middle consistency.

Knead the dough with hand or kitchen mixer until it is smooth and elastic for around 7-10 minutes.

Let the dough rest for 10 minutes. Cover it with a kitchen towel. It make us easier to handle the dough.

Divide the dough into 4 portions. Take one part and let the rest dough covered to avoid them dry out.

Roll the dough with rolling pin/bottle until thin and rectangular as your wish. Cut the noodle into the size that you prefer [long or short; 0.5-1 cm]

Place the noodles on top of dry towel. Let them dry around 2 hours or more. Continue to roll the rest of dough. The dried noodles must be carefully to handle, they can easily break up.

Noodles are ready to be boiled in salt water, chicken broth for 5-7minutes depends on how thick your noodles. Besides that, you may store the noodles for next day. For this one, you may let it dry a bit longer/overnight.
