Wakame Soup

A Korean acquaintance taught me how to make this wakame soup. Stir-frying the wakame with garlic is the secret to its deliciousness! The story behind this recipe is that store-bought wakame soup is often too salty. After my Korean friend suggested stir-frying the wakame with sesame oil and garlic, this has been our go-to recipe at home. We no longer need store-bought wakame soup mix!

Cooking Instructions
- 1
Rehydrate the dried wakame in lukewarm water. Once rehydrated, squeeze out the excess water.
- 2
In a pot, add sesame oil and garlic paste, then quickly stir-fry the drained wakame.
- 3
Add 1 2/3 cups (400 ml) of water to the pot. Once it boils, add 2 teaspoons of chicken bouillon powder, 2 teaspoons of soy sauce, 1 1/4 inches of additional garlic paste, and a pinch of black pepper.
- 4
Add chili oil to taste. Finally, sprinkle green onions and white sesame seeds on top to finish. For children, omit the chili oil.
- 5
If you find it lacking in salt, feel free to add more soy sauce and bouillon powder.

I made this by referring to a recipe that my friend used a while ago on New Year's to make an egg soup with Korean rice cakes. She used Korean dashida to flavour the soup. Dashida was totally new to me at the time so I was really surprised by it.This Korean dish tastes really authentic due to the use of grated garlic and dashida (Korean beef stock)! You can use garlic chives instead of grated garlic and it will still taste great. Recipe by LazyHata cookpad.japan -

Wakame Soup with the Soaking Liquid of Dried Maitake Wakame Soup with the Soaking Liquid of Dried Maitake
I always dry the mushrooms since they become nutritious and delicious with drying. The liquid to rehydrate the mushrooms, especially with maitake mushrooms, has a lot of flavor and fragrance, so it goes well in a soup or a simmering dish. I heard that the soaking liquid also holds a lot of nutrition. If the soaking liquid is less than 600 ml, add some water. If the soaking liquid has a strong smell, adjust by adding some water as well.
