  1. 1 bunchnanohana (spring greens, such as broccolini or rapini)
  2. 1 packagechikuwa (Japanese fish cake sticks)
  3. 4servings udon noodles
  4. ★Tempura Batter
  5. 6 tablespoonsall-purpose flour (about 45 grams)
  6. 2 tablespoonspotato starch (about 16 grams)
  7. 2 tablespoonsmayonnaise (about 30 grams)
  8. 7–8 tablespoons water (100–120 ml)
  9. ★Udon Broth
  10. 5 pieceskombu (dried kelp)
  11. Bonito flakes, to taste (use plenty)
  12. 3 tablespoonsmirin (about 45 ml)
  13. 3 tablespoonssoy sauce (about 45 ml)
  14. 1 teaspoonor more salt, to taste

    Since it’s in season, I used nanohana (spring greens) for the vegetable. Rinse quickly under water.

    Prepare your usual crispy tempura batter. Today, I doubled the recipe.

    Start by frying the nanohana until crispy.

    The batter stays crisp even after cooling, so you can fry these ahead of time.

    Fry the chikuwa until golden and crisp.

    Make the broth using bonito flakes and kombu.

    For 4 cups (1000 ml) of broth, add 3 tablespoons mirin, 3 tablespoons soy sauce, and 1 teaspoon or more salt to taste.

    Prepare the udon noodles and keep them hot.
