In a small bowl, combine the ingredients marked with *, and mix well until the miso is dissolved and smooth.

Add the ingredients marked with ** and mix.

Cut the salmon into serving-sized pieces.

Place the salmon in a Ziploc bag and add the sauce from step 2 with a spoon.

Gently massage the sauce into the salmon to coat it evenly, then refrigerate for 2-4 hours. Remove from the fridge 30 minutes before baking to bring to room temperature.

Preheat the oven to 400°F. Line a heatproof dish or tray with parchment paper and lightly oil it.

Place the salmon skin-side down.

Bake in the oven for about 15 minutes. It's ready! Optionally, sprinkle with a little sesame seeds.
