Ingredients

Per serving
  1. 8.8 oz (250 g)tuna (lean sashimi-grade, cut-offs or block)
  2. Soy sauce, to taste
  3. 1large raw egg
  4. 1 cupcooked rice (about 150 g)
  5. Wasabi, to taste
  6. 1/2shiso leaf (for topping)
  7. 1/3 bunchgreen onions, thinly sliced (or use chopped scallions for topping)

Steps

  1. 1

    If using toppings, thinly slice the green onions and finely chop the shiso leaf.

  2. 2

    If using a block of tuna, slice it thinly against the grain into bite-sized pieces.

  3. 3

    Scoop the cooked rice into a bowl. Make a small well in the center and crack the raw egg into it.

  4. 4

    Arrange the sliced tuna over the rice, covering it completely so the rice doesn't show.

  5. 5

    Add the toppings, drizzle with soy sauce, and add wasabi to finish.
