This is truly a wonderful vegan recipe that tastes nothing like classic chickpeas.

First, soak the chickpeas for at least 12–14 hours. If you know your chickpeas are tough, boil them for at least 15 minutes after soaking.

In a food processor, blend the chickpeas in batches until very smooth with no large pieces. Add the olive oil as you blend. At the end, add the onion and blend it together with the tomato.

In a large bowl, combine the chickpeas, onion, and all the other soutzoukakia ingredients except the breadcrumbs. Add the breadcrumbs a little at a time until you have a firm mixture that’s easy to shape and doesn’t stick to your hands.

Shape the mixture into soutzoukakia (oval patties) and bake them in a countertop oven or air fryer at 400°F (200°C) for 10–15 minutes.

Grate the peppers, onion, and carrot in a food processor.

In a wide, heavy-bottomed pot, heat olive oil and lightly sauté the grated vegetables. Add the wine and let it evaporate.

Add the tomato paste and sauté briefly. Then add about 4 cups water, salt, pepper, and cinnamon. Add the soutzoukakia, bring to a boil, then reduce the heat and simmer for 20 minutes until the sauce thickens.
