Umm Ali

"Umm Ali" is named after a historical event: When Princess Shajar al-Durr killed Aybak, he had another wife who had a son named Ali. After Shajar al-Durr was killed and Ali became ruler, his mother made a sweet dessert with sugar and ghee and distributed it to the people to celebrate her son's ascension. Since then, Umm Ali has become a popular Egyptian dessert.

Warm the milk and add a pinch of vanilla extract—don’t use too much. Stir in the sugar and 2 tablespoons of butter until dissolved.

Place the puff pastry, phyllo dough, or flatbread in a baking dish or metal pan. Pour the prepared milk mixture over it and top with the nuts.

Preheat your oven broiler until hot, then place the dish under the broiler until the mixture is bubbling but not dried out. Brown the top.
