Ingredients

12 servings
  1. 1/2 chazelnuts,chopped
  2. 3 lbssmall carrots, peeled
  3. 1garlic clove, very thinly sliced
  4. 1/2 tspground ginger
  5. 1/2 tspsmoked paprika
  6. 2 Tplus 1 tsp olive oil
  7. 1/2salt1/4 tsp black pepper
  8. 1/4 cpacked fresh flat-leafed parsley, chopped

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    Place nuts on a baking sheet and roast 10-12 min. Remove nuts and set aside to cool.

  3. 3

    In same pan, toss carrots with garlic, ginger, paprika, 2 T oil, salt and pepper. Cover pan tightly and roast 30 min. Uncover and roast another 20-25 min, until tender.

  4. 4

    Remove carrots from oven and drizzle with 1 tsp oil, tossing well to coat. Transfer to plate and sprinkle with nuts and parsley.
