These vegetables are rich in antioxidants, which help protect against chronic diseases and boost overall well-being. Additionally, the dietary fiber found in mixed vegetables supports healthy digestion and aids in weight management..
Steps
- 1
Cut and wash all the vegetables.
Strain the water.
Cut the tomato in small pieces.. - 2
Add oil in a pan,add Cumin, mustard seeds and Asafoetida for splutter.
Then add all the vegetables together with tomato and a cup of water,mix it and cover the pan to cook on medium flame. - 3
When veggies are 80% done, add chilli coriander and turmeric powder along with the salt.
Mix slowly so the veggies don't get mashed.
Cover the pan and cook for the remaining 20%. - 4
When the Subji gets cooked and gets dry, switch off the gas.
Transfer into a bowl.
Serve with Chapati or Rice.
