Cut the leek leaves and blanch them.

Finely chop and sauté the parts of the leeks you can't use as leaves.

Add the remaining ingredients and sauté.

When the filling is ready, fill the leek leaves and roll them up, leaving the ends open. Place them in a baking dish, add enough water to cover, and bake at 400°F (200°C) until golden brown.
