Wash and peel potatoes, brinjal, cut it partially both side, soak in a water.

Grind coarsely sesame seeds, roasted peanut, thin ghanthiya in a mixture jar.

Now add dessicated coconut, sugar, salt, turmeric powder, red chilli powder, cumin coriander powder, chopped green coriander,garam masala,oil make stuffing.

Now fill stuffing in a cutting potatoes and brinjal.

Heat oil in a kadai.

Add mustard seeds, cumin seeds, asafoetida and add stuffed potatoes, saute it well and add 3/4 cup water, cover the lid for 7 to 8 minutes

Now add stuffed brinjal, mix it well, cover the lid for 6 to 7 minutes.

Add 1/4 cup water cover the lid and cook for 3 minutes. give a nice stir, check stuffed sabji, it's cooked.sprinkle chopped green coriander, serve hot with roti or paratha.
