You can get a block of pork liver cheaply at the supermarket. This time, it was about 500 grams.

Odor removal: In a bowl, mix 1 liter (about 4 1/4 cups) of water with 1 tablespoon of sugar and soak the liver in it. Once it turns whitish, it's ready.

Cut into suitable cubes. Lightly fry the surface in a pan. Cubing gives a firmer texture, while slicing thinly makes it easier to eat.

Combine water, mirin, sake, sugar, soy sauce, ginger paste, and the green part of a scallion (if available) and bring to a boil. Once boiling, add the liver and simmer on medium heat for 3 minutes.

Increase the heat slightly to reduce the liquid, and it's done.
