I love rice but I prefer to add vegetables. This recipe calls for celery, carrots, onions, and hot peppers, but you can substitute any other vegetables. Rice freezes really well so I like to make a big batch and then freeze in 1-2 cup amounts.

Ingredients

30 minutes
15-18 cups rice
  1. 4 cupsbasmati rice
  2. 6-7 cupschicken broth (you can use water, but chicken broth imparts a nice flavor to the rice) Amount depends on rice used
  3. 4 Tbspbutter
  4. 2Carrots peeled and finely diced
  5. 2Celery stalks finely diced
  6. 1Jalapeño seeded and finely diced
  7. 1Red chili pepper seeded and finely diced
  8. 1/2Onion finely diced
  9. 1 tspblack pepper
  10. 1/2 tspsalt

Cooking Instructions

    Rinse rice in a strainer with cold water to remove some starch.

    Melt butter to a 3.5 -quart pot or larger. Add vegetables, salt and pepper, and cook until just softened.

    Add chicken stock and bring to a boil. Add rice and give it a quick stir then cover, turn heat to low and simmer 20 minutes (You want to just see a bubble or two). Turn off heat and let sit covered for 5 additional minutes.

    As you can see, it yields a lot of cooked rice. I filled ten 2-cup containers so the yield was around 15-18 cups of rice.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
