  4. Black pepper to taste
  5. 1-2 TbsCreole seasoning
  6. 1 Tbsbaking soda
  7. 8 ozpackage of portobello or baby bella mushrooms, diced
  8. 1/2yellow onion, diced
  9. 2 Tbsminced garlic
  10. 3/4 cuplow sodium chicken broth or homemade stock
  11. 1 tspWorcestershire sauce
  12. 3/4 cupheavy cream
  13. 1 TbsParsley, optional
  14. 3/4 poundyour favorite pasta
  15. 2 Tbspasta water
  16. Optional: 1 tsp garlic powder
  17. 3 ozblue cheese or Gorgonzola

Cooking Instructions

  1. 1

Put a pot of water with a little salt to boil (for the noodles). Pat dry steak & trim off excess fat. Season with salt, pepper, Creole seasoning, garlic powder (if using) and baking soda, rub it in & do both sides. Let sit for 10-30 minutes.

  2. 2

Place 1/2 of oil in a deep skillet or caldero over medium-high heat. Place steak & let cook 4 min on each side, then remove.

  3. 3

Remove oil & burnt pieces from pan. Add other half of oil & add mushrooms & about 1/4 tsp of salt. Cook for about 2 minutes. Remove from heat & put aside.

  4. 4

Add seed or olive oil to pot and turn heat to medium. Add onion & garlic, let cook for a few minutes, add some salt & pepper if desired. Add broth & Worcestershire sauce, stir. Turn heat to medium high til it starts to bubble, than turn heat down to medium low & let simmer for 5 minutes. In meantime, cut steak into bite size pieces. Your pasta water should be boiling by now, add noodles & use cooking time on package.

  5. 5

Add the cheese and the cream to the pan along with the steak and mushrooms and any accumulated juices, and 1 teaspoon salt and 1/2 teaspoon pepper, and parsley if using. Pour in your pasta water. Add Simmer to heat through, about 1 minute.

  6. 6

Place drained, cooked pasta in pot & mix. You can add more parsley if desired.
