Firstly, add the basmati rice to a bowl and wash it gently. Soak it in water for about 15-20 minutes. Soaking helps in keeping the rice fluffy and the rice will stay as single grains without becoming sticky.

In a cooking pot, add water and allow it to reach boiling point. Add the salt, soaked rice and lemon juice and cook on high flame until 80% done. Remove in a strainer and then spread it out on a large plate. Set it aside to cool completely. The rice for our fried rice is ready.

Boil the sweet corn and set it aside.

Assemble all the required ingredients. Clean and chop the veggies.

Prepare the sauce mix. In a small bowl, add the green chilli sauce, dark soy sauce and lemon juice and mix until well combined.

In an electric chopper, add the garlic cloves, ginger and green chillies and chop it finely.

For store bought paneer, soak the paneer in hot salted water for 15 minutes. Drain away the water and cut the paneer into bite sized cubes. Add the cubed paneer to a bowl. Add salt, black pepper powder and kashmiri red chilli powder and mix well to combine. Set it aside to marinate for 10 minutes.

Heat a tablespoon of oil in a pan. Add in the marinated paneer and roast it for a few minutes until slightly golden. Set it aside.

Now to prepare the fried rice, heat oil in a large cooking pot or kadai. Add the finely chopped garlic-ginger-green chillies and saute for 15 seconds. Next add the sliced onion and spring onion whites and saute on high flame for a minute.

Add the veggies. First add the beans and carrot and saute on high flame for few minutes until the beans are half cooked. Then add the cabbage, green bell pepper and boiled sweet corn and saute on high flame for 2 minutes.

Add the prepared sauce mix and mix it well. (Adding unsalted butter is optional. It makes the fried rice glossy and delicious).

Now add the cooked and cooled rice and mix it gently until well combined.

Add the fried paneer and mix it well. Add salt and black pepper powder and mix. Garnish it with some chopped spring onion greens and mix everything well to combine.

Add the chopped coriander leaves and mix it well.
