Come summer & it's Mango time in India . Lots & lots of varieties are made from Mangoes . It can be pickled , both sour & sweet or made into curries , vegetables, sweet dish , side dish , you name it & it's ready to be chopped , pureed , sliced or made into juice .
We Indians , especially Gujarati s are very fond of Sweets & if it is mangoes , " Uski To Baat Hi Kuch Aur Hai " ...............
Today , I have made sweet using Vermicelli with Mangoes & made Kheer from it . Kheer is usually made on Auspicious Occasions as an offering to Deities . But for us , Indians , We Celebrate Life , so for us every day is Auspicious. So here you go on to the recipe..........

Ingredients

30 minutes
2 serves
  1. 1/4 cupvermicelli
  2. 1/2 tbspclarified butter / ghee
  3. 5 tbspmango pulp
  4. 3 cupsfull fat milk
  5. 5 tbspsugar
  6. For garnish :
  7. 4 tbspchopped mangoes

30 minutes
  1. 1

    Heat clarified butter / ghee in a pan, when it melts, add broken vermicelli & saute for 2 minutes or golden in colour. Keep aside.

    Now take milk in a pan and add 1/2 cup of water & mix. Boil for 6 minutes, on a medium flame, stirring occasionally.

    Add sugar & mix. Boil for 10 minutes, stirring occasionally.

    Add roasted vermicelli & boil for a further 10 minutes. Then switch off the flame.

    Cool the kheer completely. Add mango pulp & mix very well. Chill thoroughly.

    Take out the mango 🥭 vermicelli kheer in serving bowls & garnish with chopped mangoes & serve.
