Steps

Soak Urad Dal for 5-6 hours. Then grind into smooth paste by adding water in batches.

Take a mixing bowl, add curd and whisk it. Add salt + sugar + roasted masala + water as required and mix well

Whisk urad dal paste for 6-7 minutes till it turns fluffy. Add salt and mix gently. Start dropping dal mixture into heated oil

Fry under medium heat and deep fry till golden brown. After frying dip vadas into water and squeeze it.
Then drop in the spiced curd. - 5
Allow the vadas to dunk in curd gravy for 2-3 hours and then it is ready to serve. Garnish with Tamarind Chutney and then it is ready to serve.
