First of all soak the lima beans in hot water for 6 to 8 hours. Then after 8 hours drain all the water from this lima beans and add 1 cup of water, salt, oil and baking soda to it, cover pressure cooker and cook 4 whistles on medium gas flame, boil it and leave it to cool.

Mix tamarind and jaggery in water and keep it aside for 10 minutes and filter this water through a sieve.

Now heat oil in a pan and add carom seeds to it, then add asafoetida, dry red chillies, bay leaf, sweet curry leaves and garlic chilli chutney to it and mix and saute.

After that add turmeric powder, boiled water along with it and mix it with salt, Kashmiri red chili powder, spicy red chili powder, coriander cumin powder, garam masala, ginger paste and water and mix it with a lid and cook on medium gas flame cook for 5 minute.

Then add the water of tamarind - jaggery and mix and cook till the oil separates. Now turn off the flame and add finely chopped green coriander leaves and mix.

Now our very delicious Gujarati VaalNu Shaak is ready to serve.. Garnish this curry with green coriander leaves. Serve this curry with poori, roti, bajra roti or rice.
