Chawal ke Papad or to put it in easy words, these are homemade Rice Poppadoms that are dried under the direct Sunlight and used whenever desired by deep frying in enough Oil. An absolutely easy peasy homemade recipe that is a rage with our family. These go well with Rice and Daal, a pure bliss that can be enjoyed at any meal during our day.
The water used depends upon the quality of the Rice used.
So it requires a proper handling. That's it. Use water accordingly.
And this can also be prepared using the Rice Flour as well but this variation is with the raw and soaked Rice. I have made with both Broken Rice and Sona Masoori Rice.
A perfect accompaniment to many an Indian meals, this is loved by all. It stays good upto a Year. And this can be made in large quantities in Summers and can be relished throughout the Year.
Add some spices like Red Chilli powder, Ginger garlic paste, Black Pepper powder Coriander Leaves etc to give these a yummy variation.

Steps

First of wash and rinse rice thoroughly. Drain and add clean enough drinking water to it for soaking overnight.

Next day add water and grind it to a smooth paste. Set it aside until use. Use 1 or 2 litres of water or as needed.

Bring 6 litres of water to a boil on a high heat. As soon as it starts boiling, add rice paste with water to it. Add slowly and keep stirring it continuously as you add it. Keep stirring it and keep the heat on a medium high.

As it starts to thicken, add the sesame and cumin seeds. Also add chopped coriander leaves and salt as needed. Don't forget to add a pinch of baking soda. That's it.

As soon as it thickens more and it starts to coat the back of the spoon. It means it's done. It would appear shiny and glossy. There should be no lumps. Keep stirring it well.

Switch off the flame. Keep it on the gas. Give it a standing time of 6-7 minutes. Spread plastic sheets. Grease with oil for easy removal of papad once dry.

Take the papad mix in small bowls and keep spreading papads while it's still hot. It should not be cold. Otherwise we cannot spread them easily. If required as you progress, add little water and heat it if it becomes cold and thick. But take care not to add more water. Heat it on a low only. Let it boil once before you switch off the flame.

That's all. Spread all papads in the same way. Dry them under direct sunlight for 2-3 days. They would dry out perfectly. The best thing is that these can even be dried inside the house under fan as well.

Store them in airtight containers and relish upto a year or more. Deep fry whenever required. These can also be roasted. Enjoy!
