Ingredients

45 min
4-5 servings
  1. 5-8Red Potatoes
  2. 1/4 cupolive oil
  3. 1 tspsalt
  4. 1 tbspaprika
  5. 1 tbsonion powder
  6. 1 tsppepper
  7. 1 tbsdried chives
  8. 1/2 tspcayenne pepper (optional)

Cooking Instructions

    Pre- heat oven to 400*
    Prepare a large pot with salted water on stove top. Bring to a boil.

    Chop red potatoes into even small pieces. Transfer to boiling water. Boil for 5-10 minutes. (You do NOT want them to be fork tender.) they should still be somewhat firm.

    As the potatoes boil, In a medium mixing bowl add 1/8 of the olive oil and spices into a bowl. Mix until well combined.

    Take a cooking sheet and line with the remaining 1/8 oil.(Add this to the oven to heat up.)

    Transfer drained potatoes to the mixing bowl and fold until the potatoes are coated completely in the oil and seasoning mixture. It is ok if they look rough. (This will help crisp the potatoes more.)

    Carefully remove the hot cooking sheet from the oven. Transfer the potatoes onto the cooking sheet. Spread out potatoes evenly. Transfer back to oven and let cook for 20-25 minutes. (Flip in between)

  7. 7

    Remove from oven and let cool for 5 minutes before serving.
